This joint procurement was issued on behalf of twelve health authorities. The objective was to use collective catering services and food supply to reduce administrative costs, obtain reductions in the supply and service price to achieve economies of scale, and collectively send a demand signal to the catering market. Tender criteria stipulated minimum weight criteria for fruit and vegetables and dairy and meat from sustainable and organic sources. Other environmental requirements included using the EU Ecolabel, reusable dinnerware, and low emission vehicles for transport.
